On our way to Portland, we had breakfast at Harris Avenue Grill in downtown Bellingham. I’ve never been in this area, so after our meal, we walked around a bit to explore and see what was there. The night before, we had dinner at Espana, and Beipas mentioned that she wanted cupcakes. We didn’t end up going though. Luckily, as we walked around, we saw Katie’s Cupcakes.
I walked directly to see which cupcakes were available that day. As soon as I read Vanilla Salted Caramel, I knew I had to get it. Salted Caramel is a must have for me right now, and Caramel on it’s own is already a must have (Caramella from Cupcakes was my favourite…. until now). I’m basing this entire review, just on the one cupcake I had, but it seriously was the best cupcake I have ever had. It was amazing. The cake was very airy, and just the right amount of sweetness. And the cupcake itself was filled with a bit of caramel (just like the caramella). But the frosting was so good. The salt complimented the caramel frosting perfectly, and the crunch from the salt added a nice texture contrast. I totally wanted to buy more, but I’ll save it for next time.
My friends also ordered some mini cupcakes, which I didn’t ask how they were, because mine was so good. Hopefully they’ll add their thoughts in the comments.
The cooler thing, is that as we were walking out we noticed on the board that it says watch us Cupcake Wars on October 7. So this small little shop from Bellingham was just recently on Cupcake Wars. We were able to catch the end of the show while relaxing in our hotel room, and they won!
The prices are a little steep though, but I would easily pay close to $4 for the cupcake I ate any day. I’ll have to go back and try some other ones to see if they are also just as good. For me though, you can’t get a cupcake much closer to perfect than this one.
