Jamie Oliver’s Tasty Crusted Cod


It’s been a while, but we were happy to try out another one of Jamie Oliver’s 30 minute meals. This time we tried his Tasty Crusted Cod meal.

Compared to the previous ones we did before, this one seemed really easy. We usually have 1 person responsible for 1 dish, and each person is usually busy for the full 30-60mins of the meal preparation. This recipe however, we all seemed to have a lot of free time, mostly because there wasn’t a lot of stove time. It was either wait for potatoes in the boiling pot or wait for the fish in the oven. It really felt like a practical recipe that could be done by one person.

Even though it was a quite easy recipe, it STILL took us an hour to do because :

  1. We had to clean up a dog accident.
  2. We had to make a chicken version of the Tasty Crusted Cod because Dee is allergic to fish.
  3. Broken Boil/Grill function on our stove

Steps

Ingredients (See exact measurements in book)

Cod

  • 2 big filets of cod, skin on, scaled, pin-boned (we tried it with skinless)
  • Fennel seeds
  • White crusty bread
  • Garlic
  • Sun dried tomatoes
  • Fresh Basil
  • Red chili
  • Parmesan cheese
  • Lemon
  • Balsamic vinegar
  • Fresh thyme
  • Fresh rosemary
Mashy Peas
  • Potatoes
  • Broccoli
  • Frozen peas
  • Butter
  • Mint sauce
Salad
  • Pancetta
  • Garlic
  • Balsamic vinegar
  • Prewashed arugula
  • Prewashed watercress
Tartar Sauce
  • Pickles/cornichons
  • Capers
  • Italian parsley
  • anchovies
  • lemon
  • mayonnaise
  • sweet paprika

There were a couple ingredients we didn’t use (anchovies and watercress) because we couldn’t find them in the supermarket, so a couple missing items here and there won’t really effect the taste. This was another tasty meal even though we over cooked the fish.

If fish is not your thing, we tried this recipe with 3 chicken breasts in addition to the cod and it worked really well with chicken as well.

Don’t skip making the tartar sauce, otherwise the meal would be too dry all together.

  • The tartar sauce made it extra good. Although the sauce was a bit thin, it was still good. Hehe.. the salad doesn’t have any pancetta showing. I didn’t toss it well enough.
