Jamie Oliver’s Chorizo & Squid and Couscous Salad


This weekend I wanted to have a light meal because of this heat wave, so I picked the Chorizo & Squid and couscous salad recipe from the 15 minute meals cook book. It’s been a while since I cooked anything from the book, I really forgot how easy these recipes are.

There’s not much to do for this recipe. You just need a food processor for the couscous and a pan for the rest of the stuff. The chorizo squid was really nice, a little spicy, a little sweet. A squeeze of lemon juice in the end is a must to brighten up the flavour. The couscous is super healthy, mixed with spinach, green onions & mint. It was a perfect meal for a hot summer night.

Ingredients:

Chorizo & Squid

  • chorizo sausage
  • squid
  • red & orange pepper
  • garlic
  • honey
  • red wine vinegar
  • feta cheese

Couscous

  • couscous
  • frozen spinach thawed
  • green onions
  • mint
  • lemon
