Dinner Thursdays!

This week my coworker and I decided to do Dinner Thursdays. It all started when we were talking about how we should be eating healthier and that the food we eat post-work is usually junk due to being tired and lazy after work. We also are starting out a work out schedule (actual schedule TBD haha). So I suggested that I’d cook dinner for us once a week so he could learn how cook and so I could learn how to cook other things.. also it would solve it me having a week’s worth of left over’s due to the recipe proportions when I do cook.

Work was busy this week so this morning I hopped on our trusty website and decided to relive the MPF weekend’s Fajita night instead of finding a new recipe to try. This time, however, I wasn’t all that careful with my ingredients and chopped up a wad of Parsley instead of Cilantro and used it in the salsa.. *oops* My guests didn’t mind, and Vivian even mentioned that it was similar to a middle eastern salad called Tabbouleh. Coolio.

The beef this time was a little screwy because Kyle and I decided to cheat and bought pre-cut meat at Safeway conveniently labeled for fajitas. Jeff got a slightly overcooked piece of meat that he couldn’t chew.. so that’s enough reason for me to not deviate from the recipe next time.

Note: I also have a bunch of reviews on the back burner I need to write, so check back in a week. Hopefully we’ll do some food blogging this weekend when I’m reunited with a part of the MPF team, woo-hoo!
