Our Thoughts:
I love this knife. I’ve had this knife since March 2011. I love the weight and the balance. It makes cutting vegetables super easy because of it’s weight and sharpness.
I tried out Global and Shun’s knives. The Globals are nice because they are one piece, but found it too light for me. The handle of the classic Shun’s didn’t feel very good in my hand because it was not very ergonomic, but very old school Asian style. The grip of the Wusthof Grand Prix II felt cheaper and not as nice as the Classics.
It’s really a personal choice when buying a chef’s knife because everyone is different. You would want to choose the one that holds best in your hand.
